Delicado – Southwest spice, fresh and fast

Delicado’s owner says even visiting Texans are taken with the authentic taste

For a quick and easy downtown lunch, Delicado’s might hit the spot for those who like a taste of the Southwest. It’s a franchise operation that began in Nanaimo, spread to Victoria and Ucluelet and just recently hopped the strait to the mainland.

Cheerfully decked out in the sundrenched colours of that part of the U.S., the place is set up for both eat-in dining and take-out. Dishes are served up quickly — a plus for the office workers and Simon Fraser University campus types who come in for the hand-held roll-ups or plated enchiladas, burritos or tostadas. Expect a bit of heat. “It’s from the chipotle sauce we make here,” says owner Dawna Ferguson.

“Specialty” roll-ups include Mediterranean, Thai, and Middle Eastern flavours. They cost $6.50 to $10.95 — the latter is for a combo of burrito, enchilada and salad. While dishes do have somewhat of a fast-food feel, there’s no lack of fresh ingredients and a choice of eight salads as well as soups, made daily. There’s also a daily special, which can be something like a Mexican lasagne or a vegetarian pie.

“We’ve had people from Texas come in and scoff and say they were from the south. But they actually enjoyed the food,” says Ferguson.

And quelle surprise! The place is licensed. So if you want a beer, a glass of wine or a margarita with your meal, it’s possible.

Delicado’s has a West Hastings address but the street entrance is on Seymour Street.

Restaurant visits are conducted anonymously and interviews are done by phone.

Tasty dishes come in threes at Yaletown spot

Thursday, July 6th, 2006

Order lamb at Sanafir and you’ll get a triplet of plates with tastes of Asia, India and the Mediterranean

Mia Stainsby
Sun

At Sanafir Restaurant & Lounge the food and interior follow the ‘silk route’ in design and flavours.

Discreetly signed, the elegant new Sanafir is too cool to announce itself, but that didn’t help my friend locate the place. She arrived on an ultra-wet evening with her ultra-gorgeous new pumps baptized in a deluge of rain after tramping up and down the street in search of it. A supreme court judge, she showed professional equanimity in dealing with wet shoe distress. I, on the other hand, would later be found wet and near sobbing upon finding a parking ticket for an eight-minute offence.

Sanafir makes a bold move in an unlikely place, a street crowded with sex shops. “We’re confident in the direction it’s going,” says managing partner Peter Girges. “We have no problem being pioneers.”

Sanafir is run by Glowbal Restaurant Group, owners of Glowbal Grill and Satay Bar, Coast Restaurant and Afterglow Lounge — all graduates of the gruelling Yaletown survival test. Sanafir is by far their most sophisticated venture.

Judging by its looks, costs should have soared as high as the 50-foot ceiling (lots of head room here) but Girges says it came in under a million. “We’re good at putting restaurants together. That’s why we’re in business,” he says, buoyed by a traffic jam of people at Sanafir’s doors seven nights a week, mere weeks after opening.

The food and interior follow the “silk route” in design and flavour hits of Asia, India and the Mediterranean. Evoke International Design mixed a modernist sensibility with Middle Eastern accents. In the upstairs lounge area, there are king-sized “beds” dressed in dramatic pillows, but don’t go and get all sleazy on them, please.

The main floor offers comfortable banquette seating as well as uncomfortable ones at a long marble communal table, which might be fine for a glass of wine with a friend, but not so for dinner. They don’t offer to check coats so I, as well as two women seated next to me, sat uncomfortably on leather cube seats with purses and coats over our laps. The others finally asked to be moved. Maybe they found the beds upstairs.

The food is high concept and lots of work for the kitchen. Each order is a triplet affair, prepared three ways with flavours of India, Asia and the Mediterranean — like a flight of dishes, arranged on a wood tray. Most are $14 for the trio, which is not a bad deal considering the effort, but it’s hell for a critic trying to take notes. Order four tapas dishes and you’re looking at at 12 creations. Order dessert and we’re up to 15. (There was only one dessert trio when I visited, but more will be added.)

The menu (on Egyptian papyrus) opens to a flock of words and it’s difficult to focus with so much fluttering text. But the food, in most instances, is more than satisfying.

The lamb is excellent. Here’s the lamb lowdown: grilled lamb chop, napoleon of marinated eggplant, goat cheese and oven-dried tomato; braised lamb shank with vidalia onion confit, Singapore curry and green apple slaw; seared rare lamb sirloin over Thai vegetables with herb shallot vegetables.

Order the scallop dish and you’re looking at seared Indian five-spice scallop with mango chutney and tandoori foam; lettuce-wrapped sauteed scallops with hoisin and water chestnuts, ginger and garlic; scallops gently poached over fattoush salad with fennel scented phyllo cup.

Whew! See what I mean about the words? The dishes are all very nicely cooked, with complex (sometimes maybe too complex) flavours. It’s a demanding way of eating as every morsel deserves attention.

The other triplets are chicken, tuna, beef, prawn, salmon, pork and vegetarian. There’s a $17 option where you can choose three from a “chef’s selection.” (That chef, by the way, is Heath Cates, who has worked at Glowbal Grill, Raincity Grill, C, and Brix.)

Matching wines might be a little challenging with so many flavours going on but I notice there’s an extensive champagne list, with several available by the glass. The vegetarian and seafood dishes certainly would happily mingle with champagne.

The dessert trio, by the way, featured a delicious yogurt cheese cheesecake, a great idea. Chocolate sushi (rice pudding rolled inside chocolate “nori”) didn’t work for me, although my husband loved it, and a meringue with wine-soaked strawberries would have been perfect if the meringue bottom wasn’t quite as chewy.

You can think of restaurants like clothing. Some look good on you, others make you look frumpy. Sanafir makes you look good, even on the cube seat. The food’s interesting and the place is a great social scene.

Oh, and about that parking ticket? Lightning struck. When I went to pay by phone, a compassionate soul answered. (Yes, I said compassionate.) The eight-minute offence was waived. Glory be!

New restaurant “ZATA” rating system for Vancouver Restaurants

Thursday, June 15th, 2006

PETER WILSON
Sun

MARK VAN MANEN/VANCOUVER SUN Nu Restaurant manager Leonard Nakonechny says he can now spot trends early and adapt by comparing sales data marketing and input costs.

More than 500 retailers and restaurateurs across British Columbia will soon be asking themselves a simple question each week:
   What’s my Zata?
Their Zata score — of one to 10, with the average being five — will show small- to medium-sized businesses in retail and hospitality just how they’re doing against their direct competitors.
Using an online data network, furniture stores will be able to see where they rate in sales against other furniture stores in the same geographic area. And the same will be true of casual-dining restaurants.
These Zata scores will give smaller businesses a sales intelligence and benchmarking tool previously only available to the likes of big box retailers.
The BC Restaurant and Food Services Association, which already has 55 members up and running with the system, and Retail BC, which will launch Zata this summer, developed the service in partnership, using technology developed by Vancouver’s Vivonet Inc.
“We constantly get phone calls from our members saying, ‘I know how I’m doing, but how is everybody else doing out there?’ ” said Sonja Kennedy, Retail BC’s marketing manager. “Now they’ll have an actual tool to show them how they’re performing against their neighbour.”
Kennedy said they’re hoping that at least 500 of their members will start using Zata within a year.
The data gathered is kept securely, and no business can see the actual details of another business’s sales or growth.
Restaurant association president Ian Tostenson said that the 55 restaurants testing the system are thrilled with the information they’re getting.
“I came from the wine industry, where they have incredible market statistics that drive the business,” said Tostenson. “The restaurant industry really didn’t have that available, and what was available was historic in nature, and not very timely.”
Tostenson said that his organization, which offers the service free to its members, is encouraging restaurateurs to enter their data weekly.
“I believe that Zata is the first step to get restaurants to the next stage in preparing us for 2010,” said Tostenson, who added that he has hundreds of members waiting to try Zata.
Leonard Nakonechny, general manager of both Nu Restaurant and C restaurant in Vancouver, said that he can now spot trends early and adapt his business by comparing sales data, marketing and input costs against his local competition.
The development of Zata happened as what Vivonet’s Brad Brooks, director of Zata, terms “a little bit of groupthink.”
He was meeting with the restaurant and food association about another matter, and the group told him what they needed was more intelligence about what was happening in the marketplace.
“We went forward and developed a project for them,” said Brooks. “At the same time, we had a discussion with Retail BC.”
Brooks said that members simply have to enter their sales and transaction numbers each week, and Zata looks after the rest.
“There’s about 114 calculations that take place in order to give a restaurant or a retailer a look at how they’re doing in terms of the rest of the marketplace.”
How Zata works
Each week, retailers and restaurants enter their sales and transaction information into a secure website.
The Zata — a number from one to 10, with five being average — is calculated, comparing retailers in specific fields and geographic areas with one another.
An overall Zata score of three indicates the business is performing in the bottom 30 per cent. A Zata of eight indicates that the business is in the top 20 per cent.
Zatas are also provided to the retailer or restaurateur for changes in sales growth, sales per square foot and sales per transaction (such as average customer bill in a restaurant).
Other information that can make up a Zata includes cost of goods sold as a percentage of sales, and cost of labour as a percentage of sales.
Tracked, too, are weekly rankings, average Zata, and variance between the current and average Zata.
All this information is kept strictly confidential and away from the eyes of competitors.

Drink outside and skip the food?

It might be possible — council reviews pub rules on drinks-only patios

You may soon be allowed to have a drink on an outdoor patio in Vancouver without ordering eats.

The city is considering relaxing its rules to allow neighbourhood pubs and hotel pub-lounges to have booze-only patios.

There are now 466 patios and the new rules could mean 200 more.

Since 1997, patios have been restricted to outlets serving food.

“Pubs are not allowed to have them, only restaurants,” said Vision Vancouver Coun. Heather Deal, who proposed the changes yesterday. “Relax that, and allow people to sit outside and have that glass of wine.”

Recently, the Waldorf Hotel on East Hastings built a patio, but got into trouble with the city.

“They applied for a patio under a pub licence, which isn’t allowed,” said Deal. “If they applied under the restaurant licence, it may well have been allowed.”

The Dominion Hotel has plans for a patio outside its pub on Abbott.

Deal said there’s room for many outdoor pub-patios in the city –along Main, Commercial, Fourth Avenue, Granville and Denman.

Deal, who lives in Kitsilano, said there are few places where she can hoist a glass and catch some rays.

“Walking up and down the street, it’s extremely difficult to find a place to sit outside and have a beer,” she said.

Deal’s move to immediately relax enforcement on patios was rejected by the council led by the Non-Partisan Association.

“I am uncomfortable with the idea of rewarding operators who have violated the bylaw,” said Mayor Sam Sullivan.

Deal said bar patios will have to pass the neighbourhood test, closing at a reasonable hour and limiting the noise.

“In many neighbourhoods, people will say ‘I don’t want this,'” said Deal. “And in some neighbourhoods, people will say ‘Absolutely, we’d like to sit outside in our own neighbourhood.”

Barwatch, representing the city’s major bars, supports the idea.

“I’ve always said they should keep the bloody things open, but they closed the patios on Granville Street,” said Barwatch spokesman John Teti.

“I’ve always been a believer in patios. Especially given that we’ve only got four or five months of sunshine here. We should capitalize on every bit of it.”

Pilar Ruiz, 27, was sipping strawberry daiquiris on the patio of Malone’s Bar & Grill in Kitsilano yesterday with her friends Christina Rowe and Krystle McKinnon.

“Patios bring tourists,” said Ruiz, a daycare teacher from Burnaby. “Tourists like to see what kind of people live here. It’s like advertising in a store window.”

McKinnon, a 22-year-old student, said it didn’t make sense for patio drinkers to have to order food. “I’m not hungry. I just ate before I came here. I’m here to sit in the sun and be with my friends. That what makes patios so good.”

“Plus,” Ruiz added, “you get drunk faster on a patio.”
